Rice a Roni Spanish Rice

Ingredients

-1 package of Rice-A-Roni Spanish Rice
-2 tablespoons of butter
-1 can (14.5 oz) of chicken broth
-1 cup of water
-1/2 cup of diced onion
-1/2 cup of diced bell pepper
-1/2 teaspoon of garlic powder
-1/4 teaspoon of chili powder
-1/4 teaspoon of cumin
-1/4 teaspoon of paprika
-1/4 teaspoon of salt
-1/4 teaspoon of black pepper
-1 cup of frozen corn kernels
-1 can (4.5 oz) of diced green chiles

Instructions

1. Preheat oven to 375°F.
2. In a large skillet, melt butter over medium-high heat. Add diced onion and bell pepper and sauté until softened, about 5 minutes.
3. Add garlic powder, chili powder, cumin, paprika, salt, and pepper to the skillet and stir to combine. Sauté for an additional 2 minutes.
4. Add the frozen corn kernels and diced green chiles and stir to combine. Sauté for an additional 3 minutes.
5. Add the Rice-A-Roni Spanish Rice, chicken broth, and water to the skillet and stir to combine. Bring the mixture to a boil, then reduce heat to low and simmer for 10 minutes, stirring occasionally.
6. Transfer the mixture to a 9x13 inch baking dish and cover with aluminum foil. Bake in preheated oven for 20 minutes.
7. Remove from oven and let cool for 5 minutes before serving.
